Insalata di farro

Cosa c’è di più semplice e gustoso da mangiare in una calda giornata afosa di Agosto?

INGREDIENTI (per 3-4 porzioni):

200 grammi di farro (peso a secco)
200 grammi di funghi freschi (champignon, prataioli coltivati)
200 grammi di fiocchi di latte (Jocca o Vitasnella)
10-15 pomodorini
cipolla di tropea

PREPARAZIONE:

Basta cuocere 30 minuti il farro in acqua bollente salata, nel frattempo soffriggere con un filo d’olio (10grammi) e acqua la cipolla di tropea. Aggiungere il farro a fine cottura per insaporirlo.
Aggiungere infine i pomodorini e i funghi freschi tagliati, i fiocchi di latte e lasciare in frigo.
Per dare un sapore in più, potete aggiungere un po’ di salsa di soia, oppure condire con un filo d’olio extravergine d’oliva e di aceto.
Questo piatto, con solo 350 Kcal circa, bilancia perfettamente il fabbisogno di macronutrienti giornalieri: 55% di carboidrati, 25% di proteine, 20% di grassi.
